The ban applies to artificial trans fat in certain oils and
shortenings. It's commonly found in baked goods and fried foods and
can clog arteries and cause strokes.
Daniel Conway is a spokesman for the California Restaurant
Association. He says almost all restaurants have already stopped
using trans fat. And he says many customers appreciate it.
"Their customers were interested in finding alternatives to trans fats and restaurateurs tend to be innovators, they're creative folks, and they're business people, so they recognized that and started moving in that direction."
Conway says some ethnic restaurants - like Mexican and Asian
eateries - are having a harder time transitioning. He says bakeries
face the biggest challenge in substituting trans fat. Because of
this they have until next year to ban the artificial fat from baked
goods.
